Indo - Mexican Bowl

One dish recipe, Ideal for Weight Loss, Loaded with proteins & Vegetables



Ingredients

Rice, 1 cup, cooked

Rajma, 1/2 cup, soaked & pressure cooked

Sweet Corn Kernel, 1/4 cup, boiled

Bell peppers, colourful, 1.2 of each, thinly sliced

Tomato, 1/2 cup, chopped finely

Cheese, 30 gm, grated (1 amul cube)

Red Chilli sauce, 1 tsp

Black pepper, 1/2 tsp

Green chillies, 2 no, finely chopped

Salt, to taste

Rock salt, 1/2 tsp

Mixed herbs,1 tsp

Oregano, 1/2 tsp

Method:

Stir fry the veggies with oil, in a pan

Add the sauces, masala's & rajma & cook for 5 to 10 mins, covered with lid

Layer the cooked rice in bowl, on top add the veg & rajma gravy.

Top it up with grated cheese & enjoy the dish


Tip

You can add any veggies of your choice

You can make two to three layers in a pie dish & bake it in oven for delicious flavour

To make it more healthier, you can use Millets or Quinoa instead of rice. You can also use brown rice instead.
