Healthy veggie pesto protein roll
Ingredients:
Green Pesto, 2 tbsp
Protein cutlet, 1 no
Multigrain Roti,1 no
Green leafy vegetables, 1-2 handful
Grated Carrot, 1 handful
Colourful Bell peppers, julienne cut , 1/2 handful
Cabbage, shredded, 1/2 handful
Cherry Tomatoes, 3 no, cut in half
Olives, few no
Jalapeno, few no
Cheddar Cheese, grated, 1 handful
Method:
Place a chapatti, spread the pesto evenly throughout the chapatti
Place veggies at the middle of the chapatti, followed by the protein cutlet
Place the remaining veggies on top of the cutlet along with olives, jalapenos & grated cheese
Make a roll of this chapatti & heat it on pan, by turning it. Cook on all the sides
Serve hot along with thin buttermilk
I have used hydroponically grown vegetables to make this dish even more healthy
