Rasam Vada

South Indian delicacy, rich in proteins

Vegan, Vegetarian, Low Carb, Weight loss recipe



Ingredients:

Urad Dal ( split, without skin), 1/2 cup, soaked overnight or for 10 hours

Tur Dal, 1/2 cup

Tomatoes, 2 med size, finely chopped

Fresh Coconut, 30 gm thinly sliced & chopped

Curry leaves, a handful, roughly chopped

Green chilli, 2 no, finely chopped

Ginger, 1 inch, finely chopped

Tamarind, 1 tbsp, soaked in water

Rasam Masala, 2 tbsp

Amchur powder, 1 /4 tsp

Seasonings like, mustard seeds, jeera, hing, turmeric, green chilli, curry leaves

Lemon juice, 1/2 tsp

Jaggery, 1 tbsp (optional)

Corriander leaves, chopped, to garnish

Salt, to taste


Method:

To make Vada's:

  1. Blenderize the soaked urad dal in a mixer grinder very well, by using minimal amount of water

  2. Transfer it to a mixing bowl, to this add coconut, curry leaves, green chilli, ginger & salt. Let it rest for sometime.

  3. Give a good whisk to the thick batter. The batter is now ready to make vada's.

  4. Heat fresh oil in a pan, & allow it to be heated to good temperature to fry the vada's.

  5. Take a spoon, dipped in water and scoop a spoonful of batter and drop it in oil. Do this for all vada's.

  6. Fry these vada's at medium to low flame, and allow it to turn brown evenly.

To make Rasam:

  1. Pressure cook Turdal with enough water, up to 3 whistles

  2. Heat a pan for seasoning the dal, add oil, mustard seeds, jeera powder, curry leaves, green chilli, rasam powder, turmeric, hing. Roast it for few seconds.

  3. To this add chopped tomatoes & cook for sometime. Add salt.

  4. Add 2 cup Water & allow it to cook further for 5 mins

  5. Now add cooked & whisked turdal, stir & allow it to cook further for 15 mins.

  6. Add Salt, red chilli powder, rasam powder, jaggery, tamarind water, amchur powder & lemon juice & 1 cup water.

To assemble:

Dip hot vada's in the rasam, allow it to settle and soak rasam for 15 mins. Garnish with corriander. Serve hot & enjoy


For healthier vada's: You may steam the vada's instead of frying, in a idli mould or bake it in oven.
