Homemade Subway Sandwich

Loaded with Fresh Veggies & Protein




Ingredients:

Loaf, any of your choice, ( I used herb loaf), 12 inch

Veggies of your choice, ( I used, Lettuce, Kale, Bell peppers, Zucchini, Carrot, Babycorn, Beetroot, Tomatoes, Cucumber, Fresh Jalapenos)

Panner, 120 gm

Salt & Pepper for taste


For the dip:

Cheese Spread, 3 tbsp

Low fat, Eggless Mayonnaise, Veeba, 2 tbsp

Celery, finely chopped, 2 tbsp

Fresh Basil, finely chopped, 3 tbsp

Red Chilli sauce, 1 tbsp

Rock Salt, Tata Salt & Pepper, to taste


Method:

  1. Mix all ingredients of dip, and keep it aside

  2. Shred the green leaves, slice the tomatoes, cucumber, carrot, zucchini, beetroot, baby corn, paneer, cut bell peppers & jalapenos into thin rings.

  3. Parboil the beetroot, stir fry carrot, zucchini, baby corn, paneer, kale

  4. To assemble: Cut the loaf from the middle & make it into two halves. Spread the dip evenly throughout the inner side of both loaves.

  5. One lower loaf, place green veggies, other veggies, & panner above & sprinkle salt & pepper in between the vegetables.

  6. Place the top loaf over this & heat it on the pan or in the oven, for 2 to 5 mins.

  7. Cut into half & enjoy it with fresh lime juice or thin buttermilk or sattu drink

Tip:

You may use, onions & boiled potato slices too.

You may use crushed garlic in the dip to make it garlicky

You may use mint flavour for the dip, by making chutney out of it & mixing it in the dip.
