Insulin is like a key on the cell, if right key is attached, the doors open and glucose can enter into the cell to be used up as energy. Since cells lack glucose, more carbohydrates are broken down, it makes you feel more hungry, it causes proteins to be used as glucose. All this excess glucose that cannot enter into the cell for energy, is taken away to make fats. So net result is: high blood sugar levels, hunger cravings & weight gain (fat gain). Whatever we eat, is converted to glucose in our body, since glucose is the sole source of energy for all the body cells, mainly brain cell. Hence avoiding any particular food thinking the other food will not increase sugar levels is a myth. There are certain foods (sugar/jaggery/honey) that cause a sudden spike in blood sugar levels should be completely avoided, while some foods cause blood sugars to rise at low pace. Portion size of such foods is important to avoid quick rise in blood sugar levels, since the insulin levels cannot spike, as there is either decrease in secretion or its action. For eg: Fruits when taken in limited amounts increase glucose levels at slow rate, but if taken in double amounts will cause rise in blood sugar levels after 4 hours.
